Szechuan Chicken Marinade

  • 3 T rice wine or dry sherry
  • 3 T hoisin sauce
  • 3 T soy sauce
  • 2 T oyster sauce
  • 2 T red wine vinegar
  • 1 T dark sesame oil
  • 1 T asian chili sauce
  • 2 T sugar
  • 1 T minced garlic
  • 1 T finely minced ginger
  • 2 minced green onions
  • cup chopped cilantro

    Marinate chicken, but retain some sauce to brush on during cooking.
