Szechuan Chicken Marinade
3 T rice wine or dry sherry
3 T hoisin sauce
3 T soy sauce
2 T oyster sauce
2 T red wine vinegar
1 T dark sesame oil
1 T asian chili sauce
2 T sugar
1 T minced garlic
1 T finely minced ginger
2 minced green onions
¼ cup chopped cilantro
Marinate chicken, but retain some sauce to brush on during cooking.
