Smoked Trout Manicotti

Stuffing...

  • 8 oz smoked trout
  • 4 tbsp finely chopped purple onion
  • 3/4 tsp dried dill
  • pepper
  • 1 cup cottage cheese
  • 1/2 cup Jarlsberg cheese
  • 1 pack frozen spinach, thawed and wilted
  • 1 beaten egg
  • 1/4 cup grated parmesan

    Combine all ingredients, and mix well.

    Sauce...

  • 1 T butter
  • 3 cloves garlic, minced
  • 3 tbsp flour
  • 1 1/2 cups milk
  • 26 oz can of tomatoes, strained and chopped. Retain juice.
  • few dashes tobasco
  • 1/2 tsp salt
  • pepper
  • 1/2 cup Jarlsberg cheese

    Melt butter. Saute garlic a little. Blend in flour and milk, and simmer until thick. Add remaining ingredients, and stir & simmer a little longer.

    Pour a little tomato juice into 9x13 pan. Stuff uncooked manicotti shells, laying them into pan. Cover with sauce. Bake at 350F for 30-40 minutes.
