Mom's Potato and Leek Soup

  • 3 cups sliced leeks (whites)
  • 3 cups sliced, peeled potatoes
  • 2 quarts water
  • 1 tablespoon salt
  • 1/2 cup table cream, or whatever
  • parsley to garnish

    Lightly saute leeks until translucent. Add potatoes, and saute a little longer. Add water and salt and simmer until everything is mushy. Add milk products and let cool. Blend the hell out of it.
