Buttermilk Roast Chicken 3 lbs. chicken; i.e. drumsticks Marinate chicken overnight in fridge: - 2c buttermilk - 1/4 c oil - 2 cloves garlic, smashed - 1 T pepper - 1.5 t salt - 1 t cumin - 1 T maple syrup Remove from marinade, shake off excess marinade, season with salt, brush with oil. Bake on parchment or foil at 425F until internal temperature reaches 165F.
